So I’ve been on a salad binge today. Like, breakfast and lunch salads and probably one for dinner…Why? Um…probably because in less than 24 hours my mega-batch of Avocado Brownies were gone. I blame Ross for not being quick enough to keep me away from them. Jerk.
Whatever. So, this morning I was in desperate need of some vegetable matter. For some reason, too, we have an ass-ton (a real unit of measurement, btw) of blueberries in the fridge that were looking a little on the edge of funky, so I did what I do best… re-purpose them into something that sounds much fancier than it actually is. I should probably call this recipe “Nuked Soggy Blueberries I Threw In A Blender With Some Other Sh*t” but “Vinaigrette” just sounds so much more refined…you know, like I actually know what I’m talking about?
Ingredients
1 c Blueberries
1/2 c Water
1 c Balsamic Vinegar
1 Garlic Clove
1/2 t Sea Salt
1/2 t Sage
1/2 t Thyme
Pinch of Dried Parsley
Instructions
Place blueberries and water in a microwave-safe dish. Nuke on high until boiling and blueberries have burst. Place in a blender with all other ingredients and puree until smooth. Chill before serving.
Aaarrgghh! I just ate my ass-ton of blueberries that were in our fridge last night. Definitely filing this for the next round of blueberries that comes here!
