I know pumpkin season is over but I am STILL madly, hopelessly in love with this GF pumpkin pancake mix from Trader Joe’s.
It’s not the recipe I’m worried about here, though. Take it or leave it, I don’t care…there is absolutely nothing original about box pancakes and an icing I threw together only because we were out of syrup.
Speaking of syrup…is it weird that I prefer generic pancake syrup to real maple syrup? I’m a Log Cabin gal now and forever.
Oh, and I am CAH-RAZY for those little packs of syrup you get from Burger King or McDonalds. If If anyone knows where to buy it in bulk, please let me know. Or even how to make it? It’s gotta be pure corn syrup.
Anyway, I really have been working on getting better pictures up on here. It’s going a little slow since the only time I get to cook anything even remotely attractive is on the weekend. It really doesn’t help that there’s still so little daylight.
I have tried so hard to find a way to photograph indoors, and I know plenty of people do it, but I’ve been swinging and missing. So, for now, natural light is the way I’m going. Which kinda sucks because my house gets so little natural light and it’s COLD outside.
Funny story, when I was taking these pictures the mailman came up to the porch and almost gave me a heart attack since I was so engrossed in taking pictures of pancakes in my pajamas. I’m also quite certain my neighbors think I need to be committed.
I’ve been slowly amassing a good collection of pictures, and am doing my best to observe and learn from others. I love submitting to Foodgawker and Tastespotting, too, because if they reject a photo they’ll tell you why.
Apparently I have some major issues with under-exposing my pictures. Thanks again, winter.

Ingredients
- 1 c Trader Joe's GF Pumpkin Pancake Mix
- 1 T chia seeds
- 3 T warm water
- 1/2 - 2/3 c vanilla almond milk
- 1/2 c powdered sugar
- 2-3 T vanilla almond milk
Instructions
- Mix the chia seeds with the warm water and allow to sit and gel for about 15 minutes.
- Combine pancake mix, chia egg, and almond milk (if batter is too thick, add more almond milk). Whisk until well combined.
- By 1/3 cup-fulls, cook on a griddle on medium heat.
- For the icing, whisk together the powdered sugar and 2-3T almond milk, depending on how thick you want it.
- Serve pancakes topped with icing.
