S’Mores Brownies

Oh, my goodness, I’m a fracking genius.  Not only are these brownies fun and delicious, but they are probably the best Paleo brownie/baked thing I’ve ever had.  No, seriously.  The texture is soft and chewy like it should be and not gritty or too dry or deflated.  Plus they’re crunchy-gooey-creamy like our favorite camp-side treat…Go, America!

Disclaimer: my topping doesn’t taste exactly like Fluff…which part of me totally wanted to use instead, not gonna lie.  But don’t worry, the sweet cream did the trick in all the right ways…Oh, baby, did it ever!

These were the result of some pretty unsavory trial-and-error, but it was totally worth it.  I’ll spare you the details because I want you to quit wasting time and get cooking.

Ingredients

Crust

2 c Pecans

2 T Butter or Coconut Oil, melted

1/4 c Honey

1 t Vanilla

1 t Cinnamon

1/2 t Salt

Brownies

1 c Coconut Butter, softened

4 oz Organic Baking Chocolate (100% Cacao)

1 T Butter or Coconut Oil

3 Eggs

1/4 c Organic Cocoa Powder

1 T Vanilla

1 T Arrowroot Powder

1 t Baking Soda

1/2 c Honey

1/2 t Salt

Marshmallow Cream Topping

2 c Whipping Cream

2 T Honey

1 T Vanilla

Instructions

Place the pecans in a food processor and pulse until you’ve got a coarse meal.  Add the melted butter or coconut oil, honey, salt, vanilla, and cinnamon.  Pulse again until well combined and sprinkle in the bottom of an 8×8 inch baking dish.  (Keep it loose enough so that it will stick to the brownie layer!)

For the brownies, melt the baking chocolate in 1 T butter or coconut oil.  Combine all ingredients in a bowl and mix well to combine.  Beat with an electric mixer until smooth.  Pour into the baking dish on top of the pecan mixture.  Bake at 350 degrees for 35 minutes or until a knife inserted comes out clean.  Cool completely before frosting.

For the “marshmallow” layer, beat the cream, honey, and vanilla together until stiff peaks form.  Spread evenly over the brownies.

Serve sprinkled with cinnamon and cocoa, perhaps with a hot chocolate!

      Yes! I will amend the post, but you should melt the chocolate in a tablespoon of butter or coconut oil.
