The. Best. Protein. Pancakes. EVER.

I eat a lot of pancakes.  Like….a whooooollllleeeee heck of a lot.  And I’m always searching for that something special, and for the longest time, I thought I had it. Yeah, well…I guess you could say I left my old flame for a younger, fresher, fluffier batch.

I owe 99.99999% of the credit for this recipe to Rose–a hell of a lady who happens to be training for another figure competition this fall.  I mean, I did make a few changes that may or may not have been unintentional.  Whatevs.

Even though I’ve hung up my heels (for now…) to focus on school, I like to live vicariously through her.  She’s got some great recipes (try the taco salad…NOW) and workouts that make me want to cry.  You know, the good kind of crying that we gym sadists live for.

Anyhoo, these pancakes make a great, filling breakfast and seriously taste like birthday cake.  Lovelovelove them.

**You can use any kind of protein you want (I prefer whey), but just add another 1/4 cup of almond or coconut milk if you use casein or rice protein or any kind that tends to get super thick.

Super Fluffy Coconut Vanilla Protein Pancakes

Ingredients
  • 3 T coconut flour
  • 1/4 t baking powder
  • 1 scoop vanilla protein (whey, casein, pea, rice, whatever…see note)**
  • 3 eggs
  • 1/4-1/3 c almond or coconut milk
Instructions
  1. Whisk all the ingredients together until no lumps remain.
  2. Heat a skillet or griddle to medium heat and add some coconut oil
  3. Drop the batter by 1/3-cup fulls onto the skillet.
  4. Cook for about 2-ish mins per side, until golden, then flip.
  5. Bon apetit!

      That’s a good question…I’d say no since the actual eggs provide moisture, but you could try omitting the eggs and adding equal parts protein and almond mil (in addition to the other almond milk called for in the recipe)

    These are horrible. Gritty and tasteless. I used Rice Protein Vanilla by NutriBiotic. The picture looks yummy, but mine didn’t look fluffy and light. They were flat and darker.

      I would definitely try whey protein then…I’ve been using both whey and casein and I think the texture is perfect

      Yeah, sorry I just made them and they were not very good. I used whey and did it exactly as the recipe said. they’re not fluffy or anything, I usually don’t leave feedback like this sorry

    The paleo pancake nazis are in full force here! If you want to be strict paleo, don’t use whey protein- simple as! As for not turning out like the photo? I wouldn’t expect me and Gordon Ramsay to produce the same end product! It takes practice and skill to make any sort of dish- the first few runs are always going to be a little rough as you learn! More positive vibes are needed- not harsh criticisms to people truly trying to help and share recipes with others.
    I think they look delicious & I can’t wait to give them a go!

    Wow! I was looking this morning online for some waffles that I could make that we’re healthy. I came across this recipe. I used the waffle maker because I am lazy and didn’t want to fuzz with flipping pancakes. They were soon good! Thanks for sharing this!

    I used this recipe to make both a pancake and a waffle – this definitely turned out the best of all protein pancake/waffle recipes I’ve tried! And that’s saying a lot.

    As for macros, I input the recipe into myfitnesspal.com:

    (Assuming whole recipe makes one serving)
    Total calories: 313
    Carbs: 16g
    (Sugar: 3g)
    Fat: 13g
    Protein: 35g

    Oh – and I forgot to mention that one way to ensure the pancakes/waffles are fluffy is to let the batter sit for a few minutes after you’ve combined all the ingredients. This gives the rising agent a head start. I let mine sit for maybe 7ish minutes while I prepped the other breakfast foods.

    I’m not sure what I did wrong but mine turned out horrible. I was so excited to try this and spent a small fortune on getting the ingredients because I need to find a way of ingesting protein for breakfast (meat freaks me out and I’m a bit of a sweet tooth) so I thought this would be perfect.

    I used 3 T coconut flour, 2 T whey protein (unflavoured), 3 egg whites (should I have used normal egg rather?), vanilla essence and a 3rd cup almond milk. My batter was so thick and way too powdery so I had to add tons of water. The ‘pancakes’ turned out more like scrambled egg :(

    Can anyone tell me what I did wrong? Please guys, suggestions!

      Ok for one, yes, you need to use the whole egg. Two, one egg white is half an egg so if you ARE going to sub egg whites you need to use 2 for 1 egg, you’d need to use 6 whites total. And maybe next time, if it’s STILL too thick, try adding a little more liquid at a time by tablespoonfuls until it’s the consistency of a proper pancake batter. Hope that helps!!

      For what it’s worth, my general rule of thumb for making coconut flour pancakes is one whole egg to one tablespoon coconut flour and then go from there…

    Great recipe! I used 2 whole eggs and an egg white so I could enjoy it with butter and a bit of syrup. Came out just fine! :) love how cakey coconut flour products can be. Thanks for sharing.

      Sure…I’ve never tried an egg substitute for this recipe in particular but I’ve used flax eggs before with success.

    These were awesome! Didn’t take me but maybe 20 minutes to make and cook… And eat ;)
    Mine were a tad dry… I think because I only used 1/4 cup almond milk. Should have added more but didn’t want to make them runny. I’m definitely going to make them again… So many ideas of what I could add to them going through my head. ;)

      I’ve found that mixing in a little almond butter or coconut oil in the batter helps with moisture…and flavor!

    Hi,

    I was just dying for pancakes and came across this recipe, gave it a try. I thought I would try the waffles. The texture of the batter seemed real good but the waffles came out very dry. Any suggestions? Has anyone tried adding apple sauce??

    These came out great! I saw that people were complaining about grittiness (it’s due to the coconut flour) so what i did was half coconut flour and half oat flour, it helped reduce the gritty texture, I also added some Carob chips to add a different texture and taste. Overall great recipe, definitely a great way to get your protein intake in a tasty way

    These were delicious! They also looked as good as they tasted! I think the coconut flour really helps the texture. Next time, I think I’ll add some vanilla extract and cinnamon to the batter.

    Made these this morning with Chocolate Vegan Protein Powder (nixed the vegan and paleo by adding my favourite organic orange fudge honey on top!) and they turned out awesome. I probably had to put a half cup of almond milk with the vegan protein powder but the pancakes were light and moist and most of all delicious! I guess it helps that I absolutely adore coconut.

    So thanks for the recipe, I love it!

    Hi! Does anyone have a suggestion of how much whey protein to use, like in tablespoons? I have 2 different kinds and the scoops are 2 different sizes… Progenex has ~8g of protein per scoop and Jay Robb has ~24g if that helps. Thanks!

    Mine also turned out bland and tasting more like egg than anything else. There was nothing sweet about them :(
    I used:
    1/3 cup almond milk
    3T coconut flour
    2ts baking powder
    3 full eggs
    1 scoop sun warrior protein powder (normally pretty sweet)

    What have I done wrong or what could I do differently?

    Great recipe. For those wondering about the ‘scoop of protein powder’, I used 60ml (4T) of whey protein isolate and they came out just fine. Tried 30ml first and the batter was much too watery.

    I’ll have to be the dissenting opinion here. Couldn’t sell these at my house. “yuk” was the response i got. very grainy texture . OK but not a great substitute. Have tried banana & egg pancakes before. The texture is much more like real pancakes & are true paleo.

    I just made these pancakes for the first time and they are fantastic! I used banana whey protein and I went easy on the almond milk pouring a little at a time so the batter wouldn’t be too runny. I also took another reader’a advice of letting the batter sit a few minutes before pouring into pan. I would def use this recipe again!

    Honestly the best coconut flour pancake recipe I have tried. Generally I don’t love coconut flour pancakes but I’ve been searching for one that I like. I found it!!! I didn’t make it paleo, I used whole foods chocolate protein powder and added about 5 semi sweet choc chips to each pancake (I make them small). They even refrigerate well and my hubby loved them. Usually he boycotts anything healthy that I make.
