Cheesey Chicken Skillet...Without the Cheese! |The Not So Desperate Housewife

So I just made us dinner in about 17 minutes. Like, walked in the door, threw my stuff on the couch, rolled up my sleeves and–boom–dinner on the table. If you count walking and tossing of stuff, it was probably 20 minutes. If you aren’t a savage like me and choose to actually take the time to hang up your jacket and place your bag in an upright position…maybe 25.

Remember when macaroni and Velveeta (and Spam, if we were lucky) was a wholesome family dinner? Or my absolute favorite was this casserole my mom used to make with chicken, Velveeta, and Stove Top. (God I miss the early 90’s).

Well, this is kind of like that, just different.

Like, this is basically a bucket of cheese sauce–just without a hint of actual cheese. This meal makes it into our rotation at least 2 or 3 times a month, more if you count the adventures I’ve had just making the “cheese” sauce on its own. I’ve definitely eaten it by itself as soup. I highly recommend it.

I challenge you to find anything made instantly better with this sauce. It’s so customizable and works for Paleo, Vegan, GAPS, FODMAPS…whatever your little heart desires. And it tastes like Velveeta…and is definitely helping this month as I try to work off the several mountains of chili cheese fries–with actual Velveeta–I consumed in Vegas. #worthit

For all of us who are perpetually in a hurry, it’s even faster if you prep everything ahead of time. I like having my chicken cut up and ready to go (I like using chicken thighs because they’re cheaper and have a little more fat) and having the sauce pre-mixed.

Cheese-less Cheesy Chicken Skillet

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Smooth and creamy cheese-less cheesy chicken skillet.


  • 2 lbs chicken, cut into 1 inch pieces
  • 1 1/2 c butternut squash puree
  • 1/2 c almond or coconut milk
  • 1/4 c apple cider vinegar
  • 1 c nutritional yeast
  • 1/2 t garlic powder
  • 1 t onion powder
  • 1 t dried mustard powder
  • salt and pepper to taste


  1. Brown the chicken in a large pan over medium-high heat.
  2. Meanwhile, whisk together the remaining ingredients.
  3. Reduce heat to medium and pour the sauce over the chicken.
  4. Stir well to combine (drippings and all!).
  5. Cover and simmer until heated through.
  6. Serve.
